Raspberry Lemon No Bake Cheesecake

This Raspberry Lemon no bake cheesecake is super delicious!  I was thinking since it’s close to Valentines Day it would be great for a party or someone that you’re in a relationship with.  Trust me you can’t go wrong with this quick and easy single serve cheesecake!

Here is what you will need:

Raspberry Lemon No Bake Cheesecake

Zest of 2 lemons

1 1/2 cups raspberries (save some for garnish)

2 tsp fresh lemon juice

2/3 cup sugar

1 (8 ounce) tub of frozen cool whip

1 tsp vanilla

1 (8 ounce) package cream cheese

6 single serve graham cracker pie crusts

First I started off buying 6 individual graham cracker pie crusts

In a large bowl, mix together the sugar and lemon zest until the sugar becomes moist and fragrant.

Add cream cheese and beat with an electric mixer until smooth. Add lemon juice and vanilla mixing to combine.

Using a rubber spatula, fold in the whipped topping until well blended.

Next one cup raspberries and mush them with a fork.

Fold the raspberries into the mixture.

Spoon the finished mixture into your individual graham cracker crusts.

Cover with plastic wrap and refrigerate for at least 2 hours to set before serving.  When you take them out of the refrigerator make sure to garnish them with extra raspberries!
